Neiman Marcus Chocolate Chip Cookies

On the Dessert menu tonight, Neiman Marcus Chocolate Chip Cookies!

I couldn’t find my recipe for these cookies as we recently moved and I’m still trying to find some things. Knowing the recipe has been widely published, I looked online. Well, as it turns out there are two Neiman Marcus cookie recipes (maybe more?). One of the uses oatmeal and it sounded good, but I wanted what I consider the original. The story behind the recipe can be found on the Neiman Marcus website.

Now that I found the recipe again, I’m making sure that I add it to my site so I can always find it. These cookies are awesome and I hope you’ll make a batch of these cookies.

Neiman Marcus Chocolate Chip Cookies

Neiman Marcus Chocolate Chip Cookies

Ingredients

  • 1/2 cup butter, softened (1 stick)
  • 1 cup brown sugar
  • 3 Tbsp granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 3/4 all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 1/2 tsp instant espresso coffee powder

Instructions

Pre-heat oven to 300 degrees

Place the butter and sugars in the bowl of an electric mixer fitted with a paddle attachment

Mix on medium speed for about 30 seconds, until the mixture is fluffy

Beat in the egg and vanilla extract until mixed in thoroughly

In another mixing bowl, sift together the flour, baking soda, baking powder, and salt

Add to the mixer bowl and beat on slow

Stir in the espresso powder and chocolate chips. Mix for about 20 - 30 seconds until combined

Prepare a cookie sheet with shortening or non-stick spray

Use a one ounce scoop to put dollops of cookie dough on the cookie sheet, each about three inches apart

Press down on the cookie dough with the back side of a spoon to form about two inch circles

Don't crowd the sheet, leave plenty of room between each cookie

Work in batches, put the cookies in the oven and bake for about 20 minutes or until they are lightly browned on the edges

Bake a little longer if you want crispy cookies
